Comparison of the content of phenolic compounds, polyphenol oxidase and peroxidase in grains of fifty sorghum varieties
140. DICKO Mamoudou. H., HILHORST, R., GRUPPEN, H., TRAORE, A. S., LAANE, C., van BERKEL, W. J. H. and VORAGEN, A. G. J.
Analysis of fifty sorghum [Sorghum bicolor (L.) Moench] varieties used in Burkina Faso showed that they have different contents of phenolic compounds, peroxidase (POX), and polyphenol oxidase (PPO). Most of the varieties (82%) had a tannin content less than 0.25% (w/w). POX specific activity was higher than the monophenolase and o-diphenolase(...)

Polysaccharide hydrolases from leaves of Boscia senegalensis
Mamoudou H. Dicko , M.J.F.Searle-van Leeuwen , R. Hilhorst , A. S. Traore , Riet Hilhorst , • Gerrit Beldman
The leaves of Boscia senegalensis are traditionally used in West Africa in cereal protection against pathogens, pharmacologic applications, and food processing. Activities of α-amylase, β-amylase, exo-(1→3, 1→4)-β-d-glucanase, and endo-(1→3)-β-d-glucanase were detected in these leaves. The endo-(1→3)-β-d-glucanase (EC3.2.1.39) was purified 203(...)

Extraction, partial purification and characterization of β-amylase from the bulbs of G. klattianus
Mamoudou H. Dicko , M.J.F.Searle-van Leeuwen , R. Hilhorst , A. S. Traore¬
The bulbs of Gladiolus klattianus are used in Burkina Faso in food processing. Activities of α-amylase and β-amylase were reported within those bulbs for the first time. The purification of the β-amylase involved buffer extraction, ammonium sulfate precipitation and gel filtration chromatography. The enzyme was purified 47 fold with 75% yield,(...)

Isolation and characterization of Desulfovibrio burkinensis sp. nov. from an African ricefield, and phylogeny of Desulfovibrio alcoholivorans
A. S. Ouattara, B. K. C. Patel, J.-L. Cayol, N. Cuzin, A. S. Traore and J.-L. Garcia
A sulfate-reducing bacterium, strain HDvT (T¯type strain), was isolated from an anoxic ricefield soil. Cells were Gram-negative, non-sporulating curved rods motile by means of a single polar flagellum. Cytochrome c3 and desulfoviridin
were present. In the presence of sulfate, glycerol, 1,2- and 1,3-propanediol, dihydroxyacetone, pyruvate, lac(...)

Curculigo pilosa is traditionally used in themanufacture of sorghum beer in West Africa. b-Amylasewas puriÆed 100-fold with 38% yield from a crude ex-tract, giving Ænal speciÆc activities of 4850 U/mg and5650 U/mg using soluble starch and p-nitrophenylmaltopentaoside, respectively, as substrates. The mo-lecular mass of the monomeric enzyme was(...)

Characterization of Anaerovibrio burkinabensis sp. nov., a Lactate- Fermenting Bacterium Isolated from Rice Field Soils
ABOUBAKAR S. OUATTARA,' ALFRED S. TRAORE,, AND JEAN-LOUIS GARCIA'"
A strictly anaerobic, gram-negative bacterium was isolated from rice field soils by using lactate as a sole
carbon and energy source. The cells were non-spore-forming, motile, curved rods. Optimal growth occurred
at 35°C and pH 6.8. No NaCl requirement was observed. Vitamins were required for growth. Our isolate,
strain B4BoT (T = type stra(...)

The nutritional status of meat is tarnished by its association with the induced cooking contaminants. The aim of this study was to assess the heterocyclic aromatic amines profile and contents in processed chicken in Burkina Faso. Eight polar and apolar heterocyclic aromatic amines (HAAs) including 2-mino-3-methylimidazo[4,5-f]quinolone (IQ), 3(...)
