Résumé

The application of proteases across the food, detergent, pharmaceutical, and waste management industries necessitates a focused examination of their future research trajectories, centered on sustainable production, scalability, and safety. While microbial proteases dominate the industrial landscape, future efforts must prioritize the transition to sustainable feedstocks and advanced fermentation technologies to reduce the environmental foot print of their production. This includes leveraging metabolic engineering and systems biology to design robust microbial cell factories that utilize lignocellulosic or agro-industrial wastestreams, thereby aligning enzyme manufacturing with circular economy principles.
